Soup is an essential part of Cantonese cuisine. Soup is great as a starter or as a main course. Cantonese soups are typically clear and light, made with fresh ingredients like chicken, pork, seafood, and vegetables. These soups are  simmered for hours to extract the maximum flavor. Some popular Cantonese soups include wonton soup, shark fin soup, and double-boiled soup. Double-boiled soup is a traditional cooking method where the ingredients are cooked in a ceramic jar in a pot of boiling water for several hours.
